Traditional Couscous Recipe

Couscous is a North African dish that is light, fluffy, and
incredibly versatile. Traditionally, it is served with stews or
grilled meats, but it can also be enjoyed as a base for various
vegetable or meat toppings.

Ingredients (for 4 servings) :
For the Couscous:
● 2 cups couscous
● 2 cups water (or vegetable/chicken broth for more flavor)
● 1 tbsp olive oil (or melted butter)
● 1 tsp salt
For the Vegetables and Garnish (Optional):
● 2 tbsp olive oil
● 1 medium onion, chopped
● 1 large carrot, sliced
● 1 small zucchini, chopped
● 1 cup chickpeas (cooked or canned, drained)
● 1/2 tsp ground cumin
● 1/2 tsp ground coriander
● 1/2 tsp ground cinnamon (optional, for a more
complex flavor)
● Salt and black pepper to taste
● Fresh cilantro or parsley, chopped (for garnish)
● Toasted almonds or raisins (optional, for added
texture and sweetness)


Instructions :

  1. Prepare the Couscous:
    ● In a large saucepan, bring the water (or broth) to a
    boil. Add salt and olive oil (or butter).
    ● Once the water is boiling, stir in the couscous,
    cover the pot, and remove from heat.
    ● Let it sit for about 5 minutes. After that, fluff the
    couscous with a fork to separate the grains. Set
    aside.
  2. Prepare the Vegetables (Optional):
    ● In a large skillet or pan, heat olive oil over medium
    heat.
    ● Add the onion and cook until softened, about 5
    minutes.
    ● Add the carrot and zucchini and sauté for another
    5-7 minutes, or until the vegetables are tender.
    ● Stir in the chickpeas, ground cumin, ground
    coriander, ground cinnamon (if using), salt, and
    black pepper. Cook for another 3-4 minutes,
    allowing the spices to bloom.
  3. Combine Couscous and Vegetables:
    ● Once the vegetables are cooked, combine them
    with the prepared couscous in the large pan. Mix
    gently to incorporate all the ingredients.
  4. Garnish and Serve:
    ● Transfer the couscous and vegetable mixture to a
    serving dish.
    ● Garnish with fresh cilantro or parsley, and add
    toasted almonds or raisins if desired.

Enjoy your Couscous!
This dish can be served as a side with grilled chicken,
lamb, or beef, or it can be eaten as a vegetarian meal
on its own. You can also add more vegetables like bell
peppers, peas, or even dried fruits like apricots for
additional flavor!
